چکیده

Moulds may produce a diversity of toxins such as aflatoxins, ochratoxins, trichothecenes, zearalenone, fumonisins and others. Although toxicological, environmental and epidemiological studies have addressed the problem of these toxins one by one, more than one mycotoxin are found usually in the same contaminated food. Risk assessment for humans potentially exposed to multimycotoxins suffers very much from the lack of adequate food consumption data. Furthermore, for a given mycotoxin, synergism and antagonism with other mycotoxins, found in the same food commodities, are not taken into account. Aflatoxin B1 and ochratoxin A belong to the most frequently occurring mycotoxins. This has repeatedly been demonstrated, however, normally, the risk resulting from their simultaneous occurrence is not considered. A descriptive study was developed to monitor air fungal contamination in one hospital food unit. Five air samples of 250 litres through impaction method were collected in food storage facilities, kitchen, food plating, canteen and also, outside premises, since this is the place regarded as reference. Besides other species, Aspergillus flavus and Aspergillus ochraceus were isolated in the studied food unit. It was used weight-of-evidence scheme proposed by Mumtaz and Durkin to qualitative assess the weight of evidence for the toxicological interaction between Aflatoxin B1 and ochratoxin A. In this case, risk assessment must be performed considering the toxicological interactions between these two mycotoxins. The limits for mycotoxins human exposure only consider the effects of each toxin and do not take into Food and Environment 81 www.witpress.com, ISSN 1743-3541 (on-line) WIT Transactions on Ecology and the Environment, Vol 152, © 2011 WIT Press doi:10.2495/FENV1100 1 8 consideration their combined effects. Moreover, the study was developed in a setting where must be considered the sensibility of exposed population.

Challenges in risk assessment of multiple mycotoxins in food

Most fungi are able to produce several mycotoxins simultaneously and, consequently, to contaminate a wide variety of foodstuffs. Therefore, the risk of human co-exposure to multiple mycotoxins is real, raising a growing concern about their potential impact on human health. Besides, government and industry regulations are usually based on individual toxicities, and do not take into account the c...

Engaging One Health for Non-Communicable Diseases in Africa: Perspective for Mycotoxins

The role of mycotoxins-e.g., aflatoxins, ochratoxins, trichothecenes, zearalenone, fumonisins, tremorgenic toxins, and ergot alkaloids-has been recognized in the etiology of a number of diseases. In many African countries, the public health impact of chronic (indoor) and/or repeated (dietary) mycotoxin exposure is largely ignored hitherto, with impact on human health, food security, and export ...

Mycotoxins: occurrence, toxicology, and exposure assessment.

Mycotoxins are abiotic hazards produced by certain fungi that can grow on a variety of crops. Consequently, their prevalence in plant raw materials may be relatively high. The concentration of mycotoxins in finished products is usually lower than in raw materials. In this review, occurrence and toxicology of the main mycotoxins are summarised. Furthermore, methodological approaches for exposure...

Multiple Mycotoxins in Rice: Occurrence and Health Risk Assessment in Children and Adults of Punjab, Pakistan

Mycotoxin contamination in rice can create a health risk for the consumers. In this study, the measurement of 23 mycotoxins in rice samples (n = 180) was performed using a validated LC-MS/MS method. A food frequency questionnaire was used to get rice consumption data for the assessment of mycotoxin dietary exposure, before calculating the health risk in adults and children of north and south re...

Contamination and Risk Assessment of Total Aflatoxin in Iranian Rice in Various Food Security Regions

Background and Objectives: Aflatoxin is one of the most important and common toxins in high consumption foods such as rice, which can threaten health of the consumers. In this study, risk of total aflatoxin based on its exposure levels and adverse effects was assessed in Iranian rice.  Materials & Methods: This study was carried out on total aflatoxin in 60 national rice samples collected base...
